What is your most memorable childhood ‘food’ memory?
Cooking my first steamed lemon sponge pudding and lemon sauce.  I loved watching the reaction on the faces of my family.

What’s your favourite food or ingredient ‘on your doorstep’?
The Kentish apple.

What is your favourite food secret?
Not telling!

What food would you travel for (within the UK)?
Shellfish of the Cornish Coast, along with a superb Cornish pasty!  Anywhere in the UK for quality pork and bacon.

What is your favourite seasonal food?
English asparagus and Scottish raspberries.

What is your favourite local food shop?
Harrods!

What is your favourite eating place?
Le Gavroche, London.

What is your favourite UK pub?
I’m still looking...

What is your favourite dish or recipe?
Braised oxtails with mashed potatoes.
