The Trafalgar Banger
Two Norfolk companies have combined their award winning skills to celebrate the memory of Norfolk’s greatest hero – Horatio Nelson. Award-winning butcher and master sausagemaker, Bryan Pickering of Old Costessey has teamed up with award-winning brewery Woodforde’s from Woodbastwick to produce an explosion of flavour with the ‘Trafalgar Banger’ sausage.
200th Anniversary
The Trafalgar Banger is named after the earth-rending noise generated by the 32-pounder guns on board H.M.S. Victory, and has been developed recently by Bryan in his galley in Old Costessey. 'The new sausage was inspired by the 200th Anniversary of The Battle of Trafalgar - Nelson’s greatest and final victory, and it has always been my intention to launch a new sausage to celebrate the life of our county's most famous hero', said Bryan.
Sausages and beer
'I wanted to find a good blend of ingredients that would work well with a Woodforde’s beer. Initially I tried a combination of beef and pork, and different quantities of Woodforde’s Admiral’s Reserve, but eventually settled for a blend of free-range pork and herbs, together with a carefully measured ‘tot’ of the full-flavoured beer. I soon realised that we had a winning combination of flavours, and decided to go for a traditional chunky style of sausage that would have satisfied the healthy appetites of Nelson’s crew members a couple of hundred years ago', added Bryan.
Sailing partners
'We are extremely pleased to be sailing in partnership with Bryan Pickering on this project and this new sausage is all about flavour, a top priority with the products from both our companies,' said Woodforde’s Director, Mike Betts. 'Admiral’s Reserve is one of our two beers dedicated to the great man - the other beer is called Nelson's Revenge - and it is especially appropriate that it is brewed with barley grown by Norfolk farmers close to the area that Nelson was born and raised, and where the maritime climate contributes so much to the high quality of the barley', he added.
