Wild Boar Sausages, Sweet Potato Mash and Caramelised Onion Dressing
To be served with OLD SPECKLED HEN
Ingredients
4 wild boar sausages
Caramelised onion dressing:
• 1 white onion quartered and sliced
• 3 tbsp extra virgin olive oil
• Salt and freshly ground black pepper
• 2 tbsp sugar
• 2 tbsp unsalted butter
• 2 tbsp vegetable oil
Sweet potato mash:
• 2 sweet potatoes
• 150ml milk
• 2 tbsp unsalted butter
• ¼ tsp cinnamon
• ¼ tsp ground cumin
• ¼ tsp dried ginger
Recipe
• Cut 2 medium potatoes into small, 2-inch cubes and boil in salted water
• Drain the potatoes once they are fully cooked
• Stir in 150ml of milk and 2 tablespoons of butter
• Add ¼ teaspoon cinnamon, cumin and ginger
• Mash until smooth and creamy
• Griddle the sausages for 12-15 minutes
• Sauté the sliced white onion with extra virgin olive oil until tender
• Add the pepper and 2 tablespoons of sugar to the pan and coat the onions evenly
• Add 2 tablespoons of butter continually stir the onions until they are brown
• Cover the mash with the onion dressing and couple with the wild boar sausages
