Cheshire Pie

Ingredients

11/2 lbs of onion
6ozs of grated cheese
1/2 lb of sliced potatoes, cooked or uncooked
Salt to taste

Intro and Method

Put the onions in a saucepan with a cupful of boiling water and boil till soft (about 30 mins).  Place the onions, cheese and potatoes in layers in a pie dish, with a layer of onions on top.  Cover with short pastry and bake in a moderate oven for half an hour.
