Ingredients

150g short crust pastry
450g Bramley apples
1 dl apple juice
2 egg whites
100g caster sugar

Intro and Method

Kent has long been renowned for a wide range of apples. Many ‘apple’ celebrations take place on Apple Day (21st October) every year.

Preheat the oven to 150oC. Line a 20cm tin with the pastry, and bake ‘blind’. Peel, core and slice the Bramley apples. Cook the slices in the apple juice for about 5 minutes and place in pastry case. Whip the egg whites adding 1 tbsp of sugar at a time until the mixture is stiff. Spread it out over the apples. Cook the apple meringue in the oven until the meringue is lightly coloured.
