Ginger’s style of cooking is upmarket home-cooking to match an upmarket new venue. Bangla cooking majors on fish, the bonier the better, shrimps and a wealth of fresh vegetables, many only recently seen in the UK. Banglas love sweet, bitter, sour and hot. Curries are generally thinner than you will find at the traditional curryhouse, and beef, chicken, mutton are eaten on the bone.
