The Cheese Shop
Just inside one of Chester’s main city gates is The Cheese Shop, run by Carole Faulkner. A small narrow shop with a cheery blue-and-white striped blind, it has a cellar underneath which gives Carole the advantage of being able to mature cheese.
It’s a good shop to browse in. Every cheese is carefully flagged with a detailed description of its flavour as well as its maker and tasters are cheerfully given to curious customers. Crammed full with over 100 British cheeses, it has several Welsh cheeses such as Penbryn, Teifi, Llanboidy and Caerphilly. Naturally she stocks a wide range of Cheshire cheese, the local territorial. As Carole says – “Up here, we’re very particular about our Cheshires.”
